Chicken & Mushroom Tostadas



I love this recipe, its super easy and quick.  It was an instant favorite of mine.  I made the pulled chicken on top of the stove by boiling it in chicken broth.  But you can feel free to use water.  I just think the broth is much more flavorful.

Total cook time 15-20 minutes
Yields 4 servings

  • 1/2 cup red onion diced finely
  • 1 tablespoon of butter
  • 2 cups of baby bella mushrooms diced
  • 1 teaspoon minced garlic
  • Salt & Pepper to taste
  • 1 cup diced tomatoes
  • 2 boneless skinless chicken breasts, rinsed and patted dry
  • 4 cups of chicken broth
  • 1 tablespoon of garlic pepper seasoning
  • 1/4 teaspoon cayenne pepper
  • 1 cup shredded cheddar cheese
  • 4 corn or flour tortilla shells
  • 1 teaspoon minced garlic

  1. Pre-heat oven to 375 degrees Fahrenheit.

  2. To make the pulled chicken, add the chicken breast to a large deep pot and season with garlic pepper and salt & pepper to taste.

  3. Add chicken broth to pot and turn heat to medium. Cover and bring to boil.

  4. After about 15-20 minutes chicken should be done and tender. Use two forks to pull chicken apart. Turn heat to low and cover.

  5. Meanwhile, heat butter over medium heat in skillet. Add minced garlic, onions, and mushrooms.

  6. Cook for 2-3 minutes, until mushrooms and onions are tender.

  7. Stir in diced tomatoes.

  8. Add chicken and sautéed veggies on top of tortillas.

  9. Sprinkle with cheddar cheese.

  10. Place tortillas in oven for 3-5 minutes, until cheese is melted.

  11. Sprinkle with chives or feta to garnish.

  12. Let sit for one minute.

  13. Enjoy!
