I love anything with Parmesan cheese and I have a feeling that you’ll absolutely love this super easy recipe for Parmesan crusted chicken breasts.

This recipe calls for bread crumbs. I chose to make my bread crumbs from scratch using wheat bread. Its really simple. All you do is lightly toast 4 slices of bread using a toaster. Break the toast into pieces and put them into a blender or food processor. Make sure you use the pulse function in order for the toast to crumb properly. Season the crumbs to your liking and voila…homemade bread crumbs. I used Italian Seasoning, Salt & Pepper, and a little bit of Garlic Pepper. You can also buy bread crumbs at the store. Either will work for this yummy recipe. Lets get started!

Ingredients:

Parmesan Crusted Chicken Breast
  • 4 boneless chicken breasts
  • 1 cup of seasoned dried bread crumbs
  • 1/2 cup of grated Parmesan cheese
  • 3/4 cups of melted butter
  • 2 tablespoons of fresh lemon juice
  • 1 teaspoon minced garlic
Mashed Sweet Potatoes
  • 3 large sweet potatoes cut into wedges
  • 1/4 teaspoon of nutmeg
  • 1 teaspoon of cinnamon
  • 3 tablespoons of butter
  • 1 tablespoon of imitation vanilla
  • 2 tablespoons of brown sugar
Asparagus
  • 1 lb fresh asparagus, ends trimmed
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 1 teaspoon of minced garlic
  • Salt & Pepper to taste

Directions:


  1. Preheat oven to 350F. Line a baking pan with aluminum foil and set aside.
  2. Rinse off chicken breasts and pat dry with a paper towel.
  3. Add lemon juice and minced garlic to melted butter and set aside.
  4. Add Parmesan cheese to seasoned bread crumbs and set aside.
  5. Take each chicken breast and dip both sides into the butter mixture and then into the bread crumbs mixture.
  6. Place the chicken breasts in the baking pan and bake 45 minutes to an hour depending on how thick the chicken breasts are. Chicken is done when internal temp reaches 165 and inside is no longer pink.
  7. Meanwhile, boil sweet potatoes on stove for 15 to 20 minutes. They’re done when they become tender and can be easily mashed with a fork.
  8. Drain sweet potatoes and add butter, cinnamon, nutmeg, vanilla, and sugar. Use fork or potato masher to mix potatoes through thoroughly. Potatoes should become nice and creamy.
  9. For the asparagus, heat minced garlic in butter and olive oil for 1 minute in skillet on medium heat.
  10. Add asparagus to skillet and let cook for 10-15 minutes. Season with Salt & Pepper to taste. Turn every so often until asparagus becomes tender.
  11. Plate chicken with asparagus and sweet potatoes.
  12. Enjoy!
