Dill Salmon with White Asparagus and Sautéed Spinach

This recipe for baked dill salmon, white asparagus, and sautéed spinach is guaranteed to be an instant favorite for everyone. Its not only quick and easy, but also healthy!

In need of a quick, healthy, but also delicious dinner idea? You’ve found it! Salmon is an all time favorite of mine and requires very little prep work. And OMG, if you’ve never tried white asparagus, then I promise that you will fall in love. We’re also going to add some sauteed spinach to ensure we have our green veggies on the plate! Lets get started!

Ingredients:


  • 4 Wild Caught Salmon Filets rinsed and patted dry ( doesn’t have to be wild caught, but those are my preference)
  • 1 tablespoon dill weed seasoning
  • 1 teaspoon minced garlic
  • 3 teaspoons garlic salt seasoning
  • 1 tablespoon lemon pepper seasoning
  • Salt & Pepper to taste
  • 1 Lemon sliced
  • 1 bushel of white asparagus (substitute for green if you must, but please refrain)
  • 1 tablespoon diced chives
  • 1/3 cup yellow onion, diced
  • 1 teaspoon crushed red peppers
  • 5 cups of spinach
  • 2 tablespoons of butter
  • 4 tablespoon of olive oil

Directions:


  1. Preheat oven to 375 Fahrenheit.
  2. Place salmon filets in oven safe baking pan. Rub salmon filets with olive oil using about one tablespoon in total.
  3. Season filets with dill weed seasoning, garlic seasoning, and salt & pepper to taste.
  4. Place lemon slice on each salmon filet. Cover pan and bake for 25-30 minutes until salmon is tender and flaky.
  5. Meanwhile, snap off ends of asparagus and peel.
  6. Heat 2 teaspoons of butter in skillet over medium heat. Add asparagus and season lightly with salt & pepper and garlic seasoning. Turning occasionally, about 8 minutes.
  7. Turn heat on skillet down to low and add chives, cover and let simmer for 5 minutes.
  8. In a separate skillet, heat one teaspoon of butter and one tablespoon of olive oil. Add onions and minced garlic. Cook until onions are transparent.
  9. Add spinach to skillet and mix. Add salt & pepper to taste, lemon pepper, garlic seasoning, and crushed red peppers. Mix until spinach is wilted about 3-5 minutes.
  10. Remove Salmon from oven and plate along with white asparagus and sauteed spinach.
  11. Enjoy!
