Yummy Mixed Veggies & Potatoes

This recipe is a vegetarians dream! Actually, anyone who loves a great side dish will definitely enjoy this quick and easy recipe!


Veggies are a must have with any dish. This side dish can be paired with any entree, but goes best with a nice baked chicken. Broccoli can be substituted for any green veggie. Lets get started!
Prep time 10 minutes
Total cook time 25 minutes


  • 2 cups of chopped broccoli
  • 3 cups of cremini mushrooms
  • 1/2 cup of diced yellow onion
  • 4 medium sized red potatoes
  • 3 cloves of minced garlic
  • 1 tablespoon of crushed red pepper flakes
  • 2 tablespoons of olive oil
  • Salt & Pepper
  • 1 tablespoon of Oregano
  • 1 tablespoon of garlic salt seasoning
  • 1/2 cup of water
Β Directions:

  1. Clean potatoes and pat dry with a paper towel.
  2. Cut potatoes into triangular cubes by cutting in half and then into fourths. Set aside.
  3. Heat skillet on medium heat and add olive oil.
  4. Once olive oil in skillet is hot, add minced garlic. Let cook for 1 minute.
  5. Place potatoes in skillet and season with salt & pepper and garlic seasoning. Allow potatoes to brown lightly on all sides.
  6. Once potatoes are browned, add mushrooms to skillet and stir to mix.
  7. After mushrooms are mixed with potatoes, add broccoli and onions to skillet. Stir to mix all ingredients.
  8. Add 1/2 cup of water, crushed red peppers, and oregano to skillet with veggies. Stir to mix.
  9. Cover veggies and let simmer for 10 minutes or until all veggies and potatoes are tender, stirring occasionally.
  10. Add additional seasoning to taste.
  11. Enjoy!
