Try this White Bean Chicken chili recipe if you’re looking for a healthier version of the traditional beef chili recipe. Its simply delicious, light, and bursting with flavor. You won’t be able to get enough! I know I can’t!

This recipe can be followed and cooked stove top or in the slow cooker. Which ever you prefer! Let’s get started!
Prep time 10 minutes
Total cook time 3 to 4 hours
Ingredients:


  • 2 pounds of boneless skinless chicken breast
  • 20 oz. canned white beans, drained
  • 1 yellow onion, diced
  • 2 tablespoons of minced garlic
  • 1 JalapeΓ±o pepper, diced (remove seeds for less heat)
  • 2 Poblano peppers, diced (remove seeds for less)
  • 1/2 cup cilantro, chopped
  • 2 teaspoons of cumin
  • 1 teaspoon of oregano
  • 4 cups low sodium chicken broth
  • Salt & Pepper taste
  • Juice from one large lime
Directions:


  1. Add all ingredients to slow cooker and cook on HIGH for 4 hours OR
  2. Cook on top of stove by first cooking the chicken in a skillet and shredding
  3. Add chicken and remaining ingredients to large pot and cover.
  4. Let simmer on medium low heat for 4 hours
  5. Enjoy!
Chili can be served with tortilla chips and sour cream or over potatoes and rice. It pretty much tastes delicious with anything. Feel free to get creative!
