Slow Cooker Lamb Stew

This stew recipe is definitely comfort food at its finest, and packed full of flavor! The recipe is fairly simple and really straight forward.  Not much effort or preparation is required for this succulent meal either.

U can actually use beef stew meat or lamb stew meat. You can even try veal stew meant. I just happen to think that the lamb meat provides a much more savory and unique flavor than that of beef. The stew meat can be purchased at your local grocery store or at the butcher. Feel free, to cut up a chuck roast and make your own stew meat though. Lets get started!

Prep time 10 minutes
Total cook time 4 hours on high – 8 hours on low
Ingredients:


  • 2 lbs of cut stew meat
  • 1 teaspoon minced garlic
  • 4 tablespoons garlic salt seasoning
  • 2 tablespoons of paprika
  • 4 cups of beef stock
  • Salt & Pepper to taste
  • 3 medium red potatoes cubed
  • 2 cups of baby carrots
  • 1 can of black eyed peas
  • 2 tablespoons fresh cilantro cut
  • 1 yellow onion, diced
  • 3 tablespoons of dried bay leaves
  • 3 tablespoons of dried thyme
  • 3 tablespoon of olive oil
Directions:


  1. Add potatoes, onions, carrots, and black eyed peas to slow cooker
  2. Heat 3 tablespoons of olive oil over medium heat in skillet. Add minced garlic.
  3. Add 1 pound of stew meat to skillet and season with half of paprika, salt & pepper to taste, and half of garlic salt seasoning. Cook for 3-5 minutes until nicely browned.
  4. Remove meat from skillet and add to slow cooker.
  5. Add remaining stew meat to skillet and season with remaining paprika, garlic salt seasoning, and salt & pepper to taste. Cook for 3-5 minutes until nicely browned.
  6. Remove from skillet and add to slow cooker.
  7. Sprinkle bay leaves, cilantro, and thyme over meat and veggies.
  8. Pour beef stock over meat and veggies and cover crock pot.
  9. Cook on high for 4 hours or on low for 8 hours.
  10. Enjoy!
