A beef pot roast recipe that is guaranteed to be hit. Personally, one of my favorite recipes to make. Use these ingredients for an oven baked roast or a slow cooked roast. Either will come out perfectly!

Follow the simple steps below to create a beautiful, tender, juicy, beef pot roast! Lets get started!
Prep time 10 minutes
Total cook time 3 to 4 hours
Ingredients:


  • 2.5 to 3 pound boneless beef chuck roast
  • 1 small bag of baby carrots
  • 3 large red potatoes diced
  • 1 large yellow onion sliced
  • 1 large bell pepper diced
  • 1 tablespoon of minced garlic
  • 4 tablespoons of olive oil
  • Salt & Pepper to season
  • Lemon Pepper to season
  • Seasoning salt
  • 1 tablespoon Cayenne pepper
  • 3 cups of beef stock
  • 2 cups of all purpose flour
Directions:


  1. Pre-heat oven to 375
  2. Tenderize roast on both sides using a meat tenderizer or fork
  3. Season roast generously on both sides using salt & pepper, seasoning salt, lemon pepper, and cayenne pepper
  4. Sprinkle flour on both sides of roast and rub in with seasoning
  5. Heat olive oil in large skillet and add garlic. Let garlic cook for one minute.
  6. Place roast in skillet and sear on both sides for 4 minutes each
  7. Remove roast from skillet and place in large baking pan with high sides
  8. Meanwhile, make gravy by adding one cup of flour to skillet used to sear roast, add one cup of beef stock, stirring continuously. Continue to add beef stock and/or flour until desired consistency is reached. Season to taste. Gravy should be smooth, nice and thick, not soupy or lumpy
  9. Place vegetables around and on roast
  10. Pour gravy all over roast and cover pan
  11. Bake roast for 2 to 2.5 hours then slice roast carefully
  12. Bake for 1.5 to 2 hours more, until done. Roast should be literally falling apart
  13. Enjoy!
Follow steps 2-10 to cook roast in slow cooker. Roast should be done in 4 hours when slow cooker is on HIGH, and 8 hours when slow cooker is on LOW.
