Coconut Curry Chicken & Basmati Rice

You must try this amazing coconut curry chicken recipe. It’s sure to blow your socks off!


The sweet flavor of coconut milk in this dish balances the spices from the curry perfectly! Everyone in the family will absolutely love this dish, even those who don’t particularly enjoy spicy food. Lets get started!

Total cook time 15 minute


  • 1 pound of boneless chicken breast diced in cubes
  • 1 yellow onion, diced
  • 1 tomato, diced
  • 1/4 teaspoon minced garlic
  • 1 tablespoon of canola oil
  • Salt & Pepper to taste
  • 2 cups of baby spinach
  • 2 cups of sweet coconut milk
  • 3 to 4 tablespoons of curry seasoning to taste
  • 1 cup of basmati rice


  1. Heat canola oil in skillet over medium heat. Add minced garlic, onion, and chicken. Season with salt & pepper and 2 tablespoons of curry. Cook chicken, stirring occasionally. About 8 minutes.
  2. Once chicken is done, stir in coconut milk. Bring to boil.
  3. Turn heat to low and add spinach and tomatoes. Stir until spinach becomes wilted.
  4. Add more curry seasoning to taste. Mix well. Cover skillet and let simmer for 5 minutes, stirring occasionally to become creamy.
  5. Meanwhile cook basmati rice (following directions on package)
  6. Serve coconut curry chicken on top of rice.
  7. Enjoy!
