I love Mexican food, especially tacos! This recipe allows for a healthier version of the traditional beef tacos, but feel free to use your ground beef instead. Lets get started!
Prep time 10 minutes
Total cook time 15 minute
Ingredients:

  • 1 pound of lean ground turkey
  • 1 red onion, diced
  • 1 tomato, diced
  • 1 jalapeno pepper, diced (seeds removed)
  • 1 lime
  • 1/3 cup of cilantro
  • 1 tablespoon of olive oil
  • Salt & Pepper
  • 1 package of taco skillet sauce
  • Mexican shredded cheese
  • Shredded lettuce
  • Tortilla shells (flour or corn)
  • Salsa Verde
Directions:

  1. Make pico de gallo by mixing tomato, onion, jalapeno, and half of the cilantro in a bowl.
  2. Cut lime in half and squeeze lime juice over pico de gallo. Add salt and pepper to taste and mix well. Set aside.
  3. Heat olive oil in skillet over medium heat. Add ground turkey and season with salt & pepper. Cook ground turkey until nicely browned, stirring occasionally. About 8 minutes.
  4. Once ground turkey is done, stir in taco skillet sauce. Cook for 1 minute. Remove skillet from heat.
  5. Warm tortilla shells in oven for 3 minutes.
  6. Add ground turkey to warmed tortilla shells. Top with pico de gallo, cheese, lettuce, and salsa. Top with remaining cilantro for garnish.
  7. Enjoy!
