Baked Corned Beef Hash & Eggs

Who doesn’t love corned beef and eggs? This is a great meal for brunch or breakfast. Simple and quick!


Corned beef hash is an all time favorite. And this recipe will allow you to prepare an amazing brunch entree with a few simple ingredients. This dish can be served alone or with my personal favorite, pancakes! Be creative! Lets get started!
Prep time 2 minutes
Total cook time 15 – 20 minutes


  • 1 can of corned beef hash
  • 1/2 diced yellow onion
  • Salt & Pepper
  • 3 to 4 eggs (I prefer organic)
  • 2 tablespoons of olive oil
  • 2 tablespoons of parsley
  • 1/2 teaspoon of cayenne pepper


  1. In a large ovenproof skillet, cook corned beef hash and onion in oil until onion is tender.
  2. Season with Salt & Pepper and cayenne pepper to taste, mix well. Remove from heat.
  3. Make 3-4 wells in the corned beef hash (depending on how many eggs you have).
  4. Break one egg into each well. Sprinkle with salt and pepper.
  5. Cover and bake at 325° for 20-25 minutes or until eggs reach desired doneness.
  6. Remove from oven and garnish with parsley.
  7. Enjoy!
